No-Bake Oreo Cheesecake

Ingredients
  • 20 Oreo cookies, crushed
  • 4 tablespoons butter, melted
  • 16 ounces (450 grams) cream cheese, softened
  • 1 cup (125 grams) powdered sugar
  • 1 teaspoon vanilla extract
  • 700 ml heavy whipping cream
  • 15 Oreo cookies, chopped


Method 

  1. Mix the crushed Oreos and melted butter in a food processor. Blend the cookies in the food processor first, until you get fine crumbs. Add the melted butter and blend again until the mixture is damp.
  2. The cookies need be finely ground, sort of like coffee grounds. If the crumbs are too big, the crust won't hold together.
  3. Spread the mixture across the bottom of a 9-inch (22.86 centimeters) spring form pan. Pack the mixture down firmly or it won't hold together. Use a spatula to flatten and smooth it out.
  4. Place the crust into the fridge to chill. This will help the crust hold together better. By the time you are done making the filling, it should be ready.


Filling
  1. Beat the cream cheese, powdered sugar, and vanilla until everything is smooth and evenly combined. You can do this using  an electric mixer fitted with a paddle attachment. You can also do this using a hand-held mixer instead.
  2. Whip the heavy cream until stiff & fold into the mixture  
  3. Roughly chop up the remaining Oreos, and gently stir them into the mixture. Use a sharp knife to chop up the Oreos. Don't worry about being too neat; the Oreos will likely crumble on their own, Use a spoon or spatula to gently mix the cookies in.
  4. Take the crust out of the fridge and scoop the filling into it. Use a spatula to spread the filling evenly across the crust. Don't add any decorations just yet. The cheesecake needs to set.
  5. Cover the cheesecake tightly with a sheet of plastic wrap, then put it into the fridge. You can also leave it there overnight; the flavors will blend in together better.
  6. Remove the cheesecake from the pan. Run a knife around the inside of the spring form pan to loosen it, and then carefully take the pan apart. Leave the cheesecake on the base of the pan.
  7. Decorate the cheesecake with some whipped cream ( use a piping bag with your favorite attachment ) then use halved Oreos or full ones in the whipped cream decoration
