Recipe Courtesy - @Robertsonsspice

Ingredients
  • 1 granny smith apple, (Peeled and Sliced in Rounds)
  • 75g white sugar
  • 5ml Robertsons Mixed Spice
  • 280g self raising flour
  • salt, (a Pinch)
  • 5ml Robertsons Cinnamon
  • 15ml castor sugar
  • 60g butter, (Diced)
  • 160ml buttermilk

Method
  1. Preheat the oven to 180°C.
  2. Place a slice of apple in 4 x 125ml capacity ramekins. Combine the white sugar and Robertsons Mixed Spice together and sprinkle over the apples.
  3. Sift the self-raising flour, salt, Robertsons Cinnamon and castor sugar together. Rub in the butter until it resembles bread crumbs.
  4. Make a well in the centre and add the buttermilk. With a pallet knife combine the buttermilk until it forms a rough dough. Turn the dough out on a working surface and press the dough into a 2.5 cm thickness. Use a 7cm diameter cookie cutter to cut 4 scones and place them in the ramekin.
  5. Bake in the oven for 20-25 minutes or until golden brown. Remove from the oven and leave to stand for 10 minutes before unmoulding.

Almond and Honey Brittle Ingredients 1/4 cup almond oil 4 cups sliced blanched almonds 2 cups sugar 1 cup honey 1/4 cup water Method Preheat the oven to 204C. In a medium, very heavy-bottomed saucepan, combine the sugar, honey, and water and cook over medium-high heat until the sugar liquefies, then turns light golden brown, 15 to 20 minutes. It should register 310 degrees Fahrenheit on a candy thermometer; this is referred to as the “hard-crack” stage. Do not stir, but brush the sugar crystals off the inside of the pan with a wet pastry brush as necessary. Once the sugar begins to brown (to the color of a football), remove the pan from the heat (watch very carefully, as the sugar can burn quickly). Once the caramel is off the heat, add the almonds to the pot and stir quickly to i...
