OAT & DATE TRAY BAKE

INGREDIENTS
  • 370 g Dates pitted and chopped
  • 30 ml Lemon juice
  • 150 g Castor sugar
  • 150 ml Water
  • 190 g / 1 ¼ cups Cake Wheat Flour
  • 220 g Brown sugar (Demerara)
  • 120 g / 1 cup Rolled oats
  • ½ teaspoon Salt
  • 155 g Margarine


METHOD
  1. Pre-heat oven to 200°C.
  2. To make date filling: In a saucepan over low heat, combine dates, water, castor sugar and lemon juice. Heat for ±10 minutes or until thick. Set aside to cool.
  3. In a large bowl, combine flour, Demerara sugar, oats and salt. Mix until well blended. Rub in margarine until mixture forms coarse crumbs.
  4. Press half the oats mixture into a square baking tray and cover with the date mixture.
  5. Chill in fridge for 15 minutes.
  6. Meanwhile, press the rest of the mix on cling wrap to form the approximate width and length of the tray. Take out the chilled tray and invert on top, filling any holes.
  7. Bake for 20 – 25 minutes until golden brown. Let cool, then cut into squares.

Decadent Coffee Fudge Ingredients 284 g white chocolate, chopped 170 oz bittersweet chocolate, chopped 1 300-mL can sweetened condensed milk 2 Tbsp coffee powder ½ Tbsp water Method Line a 8x8 inch baking pan with parchment paper; set aside. In a small bowl, dissolve coffee powder in water (it will be thick). In a heatproof bowl over a pot of barely simmering water, melt together the white chocolate, bittersweet chocolate, sweetened condensed milk, and coffee mixture, stirring constantly until smooth, about 5 minutes. Scrape chocolate mixture into prepared pan, smoothing the top. Refrigerate for at least 3 hours, or overnight, until fudge is firm. Lift fudge out of pan (by grabbing the parchment paper) and place on a cutting board. Cut into squares using a hot knife.
